Janet Keiller's main modification to the recipe in 1797 was in the addition of thin strips of orange rind, creating peel or "chip" marmalade. The peel was thought to aid digestion, but the pith and much of the fiber was discarded. Its cargo included Seville oranges, which were purchased on speculation by a Dundee grocer called, James Keiller. It was Mrs. Keiller, who saw the potential of these bitter Spanish oranges. She boiled the oranges with sugar and the resulting product was the delicious preserve now known as, Dundee Orange Marmalade. Some of them were made for the UK trade, and are labelled as "Made in Great Britain by James Keiller & Son Ltd. London, W.I, England and Dundee, Scotland". Keiller was a Scottish shopkeeper, and his wife Janet is popularly credited with having developed the first commercial marmalade in the late 1700s to deal with a shipload of quickly-degrading bitter oranges.

In my opinion, James Keiller & Son Dundee Orange Marmalade is the world's best orange marmalade. I started eating it with breakfast muffins when I worked in Scotland in the 1990's. Unlike most other marmalades that seem to be super-sweet, Keiller Orange Marmalade is made with Seville Oranges, which are noted for their slightly bitter flavor.
